Curry van Sperziebonen en Chinese kool

Ontstaan op een zondagmiddag met restjes uit de koelkast.

Ingredienten:

  • 1 eetlepel ghee of plantaardige olie
  • 1 ui, fijn gesnipperd
  • 2  rode pepers,  ontzaad, fijn gesneden
  • 1 eetlepel nigella
  • 6 cardamom peulen
  • 1 theelepel korianderzaad
  • 1 theelepel komijn
  • 1 theelepel turmeriek
  • 1 mespunt asafutida
  • 500 gram sperziebonen, schoon en in stukjes van ca 3 a 4 cm
  • zout
  • 1 kleine chinese kool, in reepjes gesneden
  • 1 eetlepel hete limepickle (beste in hindoestaanse winkels)

Bereiding:

  • Neem een platte braadpan die groot genoeg is om alle ingredienten te bevatten.
  • Fruit de ui in de ghee of olie goudbruin, voeg pepers toe en fruit nog 1 minuut.
  • Voeg de overige kruiden toe en fruit weer 1 minuut.
  • Voeg de sperziebonen toe met wat zout meng goed door het kruidenmengsel.
  • Voeg na 3 minuten fruiten een scheut water toe. Stoof de sperziebonen tot ze beetgaar zijn en meng dan de chinese kool erdoor.
  • Stoof nog kort tot de chinese kool ook beet gaar is.
  • Voeg de hete pickle erbij (eventueel meer als je van erg heet houdt)
  • Serveer met witte rijst of pilav.
