Chickenwing Curry

Thais eten doet het vaak goed op de set vooral in de zomer of bij lange studio producties. Van alle thaise gerechten behoort deze tot de favorieten.

Bereidingstijd:

45 minuten

Ingredienten:

  • 1 kg kippenvleugels of kluifjes
  • arachideolie om in te bakken.
  • zout
  • 1 ui
  • 1 eetlelepel gele currypasta
  • 6 cardamompeulen
  • 1/2 gele Mme Jeanette peper
  • 3 cm gember
  • 2 stengels citroengras
  • 1 eetlelepel koenjit (geelwortel)
  • 250 ml water
  • 125 ml kokosmelk
  • 1 eetlelepel thaise vissaus
  • 2 rode pepers

Bereiding:

  • Bak de kippenvleugeltjes in wat arachide-olie rondom bruin.  Bestrooi met zout en leg ze in een een ovenschaal, bewaar het vet.
  • Snipper de ui en fruit in dezelfde pan en vet als de kippenvleugeltjes, schraap de restjes van de kip los.
  • Schil de gember en snijd in plakjes. Snijd de stengels citroengras in 2 of 3 lange stukken.
  • Voeg currypasta, kardemom, Mme jeanette (in zijn geheel), gember, citroengras en geelwortel toe en fruit mee.
  • Voeg  water en kokosmelk toe. schraap goed over de bodem en laat inkoken tot ze begint in te dikken. Corrigeer op smaak met de vissaus.
  • Giet over de kippenvleugeltjes en zet de ovenschaal 25-30 minuten in een oven van 180 graden.
  • Snij de pepers in schijfjes en garneer de kippenvleugeltjes ermee als ze uit de oven komen.
  • Serveer met geurige witte basmatirijst
